Ag's Famous Chicken Casserole
Chicken & Stock
4-5 lb stewing hen
4 celery stalks w/leaves
1 carrot
1 onion
2 t salt
1/8 t pepper

Casserole
1/2 C onion, chopped
1/2 C green pepper, chopped
4 oz can mushrooms
12 oz noodles
3-4 T pimentos, chopped
8 oz can ripe olives, chopped
12 oz pkg frozen peas, thawed
celery salt to taste
seasoned salt to taste
salt and pepper to taste
1 1/2 C sharp cheddar cheese, grated
  1. cut up stewing hen
  2. place in stock pot with enough water to cover
  3. add mirepoix, salt, and pepper
  4. cover and simmer gently until tender-- 2 to 3 hours
  5. cool in stock
  6. remove meat from bone
  7. saute in butter the onion, green pepper, and mushrooms
  8. add liquid from mushrooms and ripe olives to chicken stock
  9. bring to boil and add noodles
  10. cook until tender
  11. add chicken, sauteed veges, pimento, olives, peas, celery salt, season salt, and pepper
  12. pour half the mixture in to 3 qt baking dish
  13. add half the cheese
  14. add remaining mixture
  15. top with remaining cheese
  16. cover and bake at 325 for 45 minutes
  17. uncover and bake 15 minutes until browned
