Southwest Yard Bird

  1. cut chicken into pieces
  2. place on a wire rack over a sheet pan a let rest in the fridge for at least 6 hours-- the skin should be very dry
  3. pre-heat an indirect grill to 350
  4. place the flour in a plastic bag
  5. shake the chicken pieces in the flour until thinly coated
  6. shake off the excess flour and return to the wire rack
  7. arrange the chicken in a single layer on the grill
  8. cook at 350 for 90 minutes-- if you're looking... you ain't cooking!  I never raise the lid during this time
  9. remove the chicken to an aluminum foil pan
  10. pour the Southwest Sauce over the top being sure coat the chicken well
  11. cover with foil for about 10 minutes
  12. serve with extra sauce on the side if desired
  • This can be replicated in the oven as well
