| - cut chicken into pieces
- place on a wire rack over a sheet pan a let rest in the fridge for at least 6 hours-- the skin should be very dry
- pre-heat an indirect grill to 350
- place the flour in a plastic bag
- shake the chicken pieces in the flour until thinly coated
- shake off the excess flour and return to the wire rack
- arrange the chicken in a single layer on the grill
- cook at 350 for 90 minutes-- if you're looking... you ain't cooking! I never raise the lid during this time
- remove the chicken to an aluminum foil pan
- pour the Southwest Sauce over the top being sure coat the chicken well
- cover with foil for about 10 minutes
- serve with extra sauce on the side if desired
- This can be replicated in the oven as well
