- 1 whole brisket
- 1 recipe brisket rub
- 1 bottle Stubb's Beef Marinade
| - rub brisket and refrigerate 24 hours
- prepare smoker with mesquite
- smoke brisket at 225 until 160 to 170 internally
- place brisket on 2 layers of heavy duty aluminum foil
- bring up sides to form a bowl
- pour the bottle of marinade on top of the brisket
- seal heavy duty aluminum foil tightly
- continue cooking at 250 to 275 until the internal temperature reaches 190-195*
- some brisket may need to go to 205—if the probe wiggles easy it’s done. If not, keep going.
