Whole Brisket
  • 1 whole brisket
  • 1 recipe brisket rub
  • 1 bottle Stubb's Beef Marinade
  1. rub brisket and refrigerate 24 hours
  2. prepare smoker with mesquite
  3. smoke brisket at 225 until 160 to 170 internally
  4. place brisket on 2 layers of heavy duty aluminum foil
  5. bring up sides to form a bowl
  6. pour the bottle of marinade on top of the brisket
  7. seal heavy duty aluminum foil tightly
  8. continue cooking at 250 to 275 until the internal temperature reaches 190-195*
  • some brisket may need to go to 205—if the probe wiggles easy it’s done. If not, keep going.
