- 12 habenero peppers
- 2 med tomatoes
- 1 medium onion
- 4 cloves garlic
- 1/2 bunch cilantro, leave only
- 2 T orange juice
- 1 T lime juice
- kosher salt to taste
| - fit the large bowl of a food processor with the chopping blade
- drop the peeled garlic into the running machine and let process until finely chopped
- remove the stems from the peppers and discard
- add the peppers to the bowl and pulse 4 to 5 times or until coarsely chopped
- add the onion and cilantro and pulse 4 to 5 more times
- add the tomatoes, orange juice, and lime juice and pulse 4 to 5 times
- this should be finely chopped at this point
- pour into a bowl and adjust seasoning by adding salt as needed
