Chipotle Bacon Chicken
  • 4 boneless, skinless, halved chicken breast
  • 4 thick slices pepper jack cheese

Slather
  • 1 C mayonnaise
  • 1/2 C bacon, cooked and crumbled
  • 1/4 C green onion, chopped
  • 2 chipotle pepper, chopped - add adobo sauce to taste

  • 1 grilling plank

  • pre-heat an indirect grill or smoker to 350
  • follow the manufacturers instructions for plank preparation
  • combine slather ingredients in a bowl
  • cut a pocket into the side of each chicken breast
  • stuff a thick slice of cheese into each pocket
  • place each chicken breast on the plank
  • spread the slather evenly on top being sure to seal the edges of the chicken to the plank
  • place the plank on the grill
  • cook until the chicken reaches an internal temperature of 160 degrees, about 30 to 35 minutes
  • serves 4
