- 4 boneless, skinless, halved chicken breast
- 4 thick slices pepper jack cheese
Slather - 1 C mayonnaise
- 1/2 C bacon, cooked and crumbled
- 1/4 C green onion, chopped
- 2 chipotle pepper, chopped - add adobo sauce to taste
| - pre-heat an indirect grill or smoker to 350
- follow the manufacturers instructions for plank preparation
- combine slather ingredients in a bowl
- cut a pocket into the side of each chicken breast
- stuff a thick slice of cheese into each pocket
- place each chicken breast on the plank
- spread the slather evenly on top being sure to seal the edges of the chicken to the plank
- place the plank on the grill
- cook until the chicken reaches an internal temperature of 160 degrees, about 30 to 35 minutes
