Carnitas
  • 3-4 # pork shoulder
  • 1 1/2 t salt
  • 1 t cumin
  • 1 t chili powder
  • 1 bay leaf
  • 4 garlic cloves, thinly sliced
  • 1 onion, thinly sliced
  • Water
  1. preheat the oven to 350
  2. cut the pork into fist size chunks
  3. place the meat in a large, heavy pot with the bay leaf, garlic and onion
  4. season to taste with salt, pepper, chili powder, and cumin
  5. toss to coat the pork evenly
  6. leave on the counter for about 30 minutes or refrigerate if longer is needed
  7. add enough water to almost, but not entirely, cover the meat
  8. put the pot in the oven, uncovered
  9. cook for about 4 hours
  10. stir occasionally
  11. when the pork is falling apart remove the pot from the oven
  12. remove the bay leaf and the bone
  13. the pork can be served at this point
  14. alternatively, it can also be returned to the oven under the broiler
  15. broil for about 5 minutes to crisp the outside of the pork
  16. serve with your favorite side and enjoy
