- 3-4 # pork shoulder
- 1 1/2 t salt
- 1 t cumin
- 1 t chili powder
- 1 bay leaf
- 4 garlic cloves, thinly sliced
- 1 onion, thinly sliced
- Water
| - preheat the oven to 350
- cut the pork into fist size chunks
- place the meat in a large, heavy pot with the bay leaf, garlic and onion
- season to taste with salt, pepper, chili powder, and cumin
- toss to coat the pork evenly
- leave on the counter for about 30 minutes or refrigerate if longer is needed
- add enough water to almost, but not entirely, cover the meat
- put the pot in the oven, uncovered
- cook for about 4 hours
- stir occasionally
- when the pork is falling apart remove the pot from the oven
- remove the bay leaf and the bone
- the pork can be served at this point
- alternatively, it can also be returned to the oven under the broiler
- broil for about 5 minutes to crisp the outside of the pork
- serve with your favorite side and enjoy
