- 1 head cauliflower, cut into small pieces
- 1 bunch green onions, chopped into
- 1/2 C cheddar, shredded
- 1/3 C mayonnaise, I prefer Duke's
- 1/3 C sour cream
- 6 slices bacon, browned and crumbled
- kosher salt
- fresh ground black pepper
| - place cauliflower in a covered microwave safe bowl
- microwave on high for 10 minutes
- drain and set aside to cool, it should be warm when mixed
- mix mayonnaise, sour cream, cheddar, crumbled bacon and green onions in a large bowl
- add the warm cauliflower to the mayo-sour cream mixture and toss to coat
- taste for seasoning and add salt and pepper to taste tossing lightly after each addition
- cover and refrigerate for at least 2 hours or until ready to serve
