Notato Salad
  • 1 head cauliflower, cut into small pieces
  • 1 bunch green onions, chopped into 
  • 1/2 C cheddar, shredded
  • 1/3 C mayonnaise, I prefer Duke's
  • 1/3 C sour cream
  • 6 slices bacon, browned and crumbled
  • kosher salt
  • fresh ground black pepper
  1. place cauliflower in a covered microwave safe bowl
  2. microwave on high for 10 minutes
  3. drain and set aside to cool, it should be warm when mixed 
  4. mix mayonnaise, sour cream, cheddar, crumbled bacon and green onions in a large bowl
  5. add the warm cauliflower to the mayo-sour cream mixture and toss to coat
  6. taste for seasoning and add salt and pepper to taste tossing lightly after each addition
  7. cover and refrigerate for at least 2 hours or until ready to serve
