Smoke Roasted Cabbage
  • 1 head cabbage
  • 1 med onion, diced
  • 1/2 lb bacon, diced
  • 1/2 stick butter, cut into cubes
  • kosher salt & black pepper, to taste
  1. setup the grill/smoker for indirect cooking and stabilize at 325
  2. using a large chefs knife remove the core of the cabbage-- cut at a downward angle to remove the core and create a cavity
  3. cook the bacon until crispy and set aside
  4. cook the onions in the drippings until beginning to brown
  5. return the bacon pieces to the pan
  6. adjust seasonings
  7. using a piece of heavy duty aluminum foil formed into a ring or a baking ring set the cabbage upright in a foil pan
  8. fill the cavity with the onion and bacon mixture
  9. dot with pieces of butter
  10. put it on the smoker and maintain 325 until the cabbage is cooked through-- about 1 to 1/2 hours depending on the cabbage
