- 1 head cabbage
- 1 med onion, diced
- 1/2 lb bacon, diced
- 1/2 stick butter, cut into cubes
- kosher salt & black pepper, to taste
| - setup the grill/smoker for indirect cooking and stabilize at 325
- using a large chefs knife remove the core of the cabbage-- cut at a downward angle to remove the core and create a cavity
- cook the bacon until crispy and set aside
- cook the onions in the drippings until beginning to brown
- return the bacon pieces to the pan
- adjust seasonings
- using a piece of heavy duty aluminum foil formed into a ring or a baking ring set the cabbage upright in a foil pan
- fill the cavity with the onion and bacon mixture
- dot with pieces of butter
- put it on the smoker and maintain 325 until the cabbage is cooked through-- about 1 to 1/2 hours depending on the cabbage
