Cole Slaw
  • 1 bag coleslaw mix or shredded napa cabbage
  • 2 jalapenos, small dice
  • 1/2 C mayonnaise
  • 3 T rice vinegar
  • kosher salt
  • fresh ground black pepper
  1. in a small bowl combine the mayo and vinegar, stirring until smooth
  2. pour over the cabbage or close slaw mix
  3. toss until well combined
  4. taste for seasoning and add salt and pepper to taste
  5. refrigerate for at least 2 hours or until ready to serve
