Chili Con Carne
  • 1 t vegetable oil
  • 1 lg onion, chopped
  • 3 jalapeno's, finely chopped
  • 2 bell peppers, chopped
  • 6 cloves garlic, minced
  • 2 lbs ground beef
  • 1/2 C chili powder
  • 1 T oregano
  • 1 T kosher salt
  • 1/4 t cayenne pepper
  • 1 28oz Can crushed tomatoes
  • 1 15oz Can diced tomatoes
  1. preheat a heavy pot to medium high
  2. add the oil
  3. add all the vegetables and saute until softened
  4. add the ground beef and break apart with a large spoon
  5. add the spices
  6. continuing cooking until the meat is cooked through
  7. add the tomatoes
  8. reduce heat to low
  9. simmer until the flavors are well combined, 4 to 6 hours, stirring occasionally
  10. taste and adjust seasonings as needed
