- 1 t vegetable oil
- 1 lg onion, chopped
- 3 jalapeno's, finely chopped
- 2 bell peppers, chopped
- 6 cloves garlic, minced
- 2 lbs ground beef
- 1/2 C chili powder
- 1 T oregano
- 1 T kosher salt
- 1/4 t cayenne pepper
- 1 28oz Can crushed tomatoes
- 1 15oz Can diced tomatoes
| - preheat a heavy pot to medium high
- add the oil
- add all the vegetables and saute until softened
- add the ground beef and break apart with a large spoon
- add the spices
- continuing cooking until the meat is cooked through
- add the tomatoes
- reduce heat to low
- simmer until the flavors are well combined, 4 to 6 hours, stirring occasionally
- taste and adjust seasonings as needed
