Red Enchilada Sauce
  • 1/2 # dried chile guajillo
  • 1/2 # dried chile pasilla
  • 2 dried chile cascabel
  • 1 or 2 dried chile de arbol
  • 2 gallons water
  • 1 T salt
  • 4 garlic cloves
  • 1 small onion, cut into quarters
  • 1/2 C vegetable oil
  • 1-oz cider vinegar
  1. at night before you go to bed, put all dried chiles in the 2 gallons of water
  2. keep submerged with a plate
  3. the next day, save 3 or 4 cups of water used to soak the chiles
  4. carefully remove the stumps and discard
  5. add batches of peppers and the remaining ingredients to a blender and blend very well
  6. you will need to add water as you go because it is quite thick
  7. put in colander or food mill and slowly filter out skins and whatever didn't blend smoothly
