- 1/2 # dried chile guajillo
- 1/2 # dried chile pasilla
- 2 dried chile cascabel
- 1 or 2 dried chile de arbol
- 2 gallons water
- 1 T salt
- 4 garlic cloves
- 1 small onion, cut into quarters
- 1/2 C vegetable oil
- 1-oz cider vinegar
| - at night before you go to bed, put all dried chiles in the 2 gallons of water
- keep submerged with a plate
- the next day, save 3 or 4 cups of water used to soak the chiles
- carefully remove the stumps and discard
- add batches of peppers and the remaining ingredients to a blender and blend very well
- you will need to add water as you go because it is quite thick
- put in colander or food mill and slowly filter out skins and whatever didn't blend smoothly
