Finadene Sauce
  • 1 shallot
  • 8 jalapeno
  • 1/2 C tamari
  • 1/4 C cider vinegar
  1. slice the onions and jalapeno as thinly as possible
  2. mix all the ingredients in a non-reactive container
  3. store in the refrigerator for at least 4 hours... 48 is better

This sauce is not terribly hot as the tamari and vinegar seem to moderate the jalapenos over time.  However it owes its popularity to the complex flavor that develops with time.  I enjoyed it tremendously on yard bird, but I believe it could be quite tasty on many things.
