- 1/2 med red onion, peeled and chopped
- 1 1/2 C white vinegar
- 1/2 C water
- 6 cloves garlic
- 1/4 C fresh lime juice
- 1 T kosher salt
- 1 t black pepper
- 1/4 C coarse grain mustard
- 12 habanero chiles, seeds and stems removed
| - combine the first 8 ingredients in a sauce pan
- simmer over medium heat for 10-15 minutes until softened
- puree the mixture
- add the habs
- puree until smooth
