Kalua Pork Loin
  • 1 Pork loin, about 4 pounds
  • 1 recipe mustard rub
  • 1 medium onion, thinly sliced
  • 3 cloves garlic, finely minced 
  • 1 inch ginger, finely minced
  • 1/2 stick salted butter
  • 2 T mustard rub, reserved
  1. cut the pork loin down the middle and open it like a book
  2. dust it liberally with the mustard rub
  3. spread the onions, garlic, and ginger on one side of the loin
  4. close the book and tie every few inches with butchers twine
  5. rub a generous amount of the rub on the top and bottom of the loin
  6. wrap tightly in plastic and let it rest in the refrigerator for 4 hours
  7. prepare a cooker for indirect cooking and pre-heat to 350
  8. place the loin in the center of the grate over a drip pan
  9. in the meantime, melt the butter and add the reserved rub
  10. cook until it reaches 125 internally, about 1 1/2 to 2 hours
  11. begin basting every 10 to 15 minutes with butter and rub mixture
  12. when it reaches the desired temperature, I prefer 145, about another 45 minutes
  13. remove to a board and allow to rest for 15 to 20 minutes
