- 1 Pork loin, about 4 pounds
- 1 recipe mustard rub
- 1 medium onion, thinly sliced
- 3 cloves garlic, finely minced
- 1 inch ginger, finely minced
- 1/2 stick salted butter
- 2 T mustard rub, reserved
| - cut the pork loin down the middle and open it like a book
- dust it liberally with the mustard rub
- spread the onions, garlic, and ginger on one side of the loin
- close the book and tie every few inches with butchers twine
- rub a generous amount of the rub on the top and bottom of the loin
- wrap tightly in plastic and let it rest in the refrigerator for 4 hours
- prepare a cooker for indirect cooking and pre-heat to 350
- place the loin in the center of the grate over a drip pan
- in the meantime, melt the butter and add the reserved rub
- cook until it reaches 125 internally, about 1 1/2 to 2 hours
- begin basting every 10 to 15 minutes with butter and rub mixture
- when it reaches the desired temperature, I prefer 145, about another 45 minutes
- remove to a board and allow to rest for 15 to 20 minutes
